Comfort food - ultimate apple crumble

Warm and comforting. This apple crumble is gluten, sugar & dairy free. Serve with a dollop of natural yoghurt (if tolerated) or soya yoghurt.

Ingredients
  • 4 eating apples, peeled and chopped into small chunks
  • 1 tsp cinnamon
  • A handful of sultanas and apricots (chopped into small peices)
  • 4-5 tbsp water
  • 100g rice flour
  • 80g ground almonds
  • 50g gluten free oats
  • 80g coconut oil
  • 70g coconut sugar* (adjust according to taste)
  • Pecans (or other nut) to decorate
Instructions
  1. Place the apples and sprinkle cinnamon, sultanas and chopped apricots in a saucepan with the water and sauté over a medium heat for a few minutes or until the apples are softened but retain some bite.
  2. Place the apple mixture into an ovenproof dish (I used a round 25cm dish)
  3. In a food processor place all the remaining ingredients except the pecans and blitz until it resembles a crumbly texture.
  4. Sprinkle the mixture evenly over the apple base.
  5. Cook for 40 - 45 minutes, placing the pecans on the crumble 5 minutes before the end of cooking.
  6. Serve with natural yoghurt.
