Delicious pea & mint soup

Serves: 4-6
- 25g butter or oil
- 1 large onion, chopped
- 450g, washed & roughly chopped spinach
- 225g frozen peas, defrosted
- 850ml vegetable stock
- 3 tbsp chopped mint
- 150ml creme fraiche or soya cream
- Mint leaves to decorate
- Heat the butter or oil in a large saucepan and add the chopped onion over a medium heat, cook for 5 mins
- Add the chopped spinach, stir until wilted then add peas and stir again
- Add half of the stock and bring to the boil, then simmer for 5 mins
- Puree the soup in the blender, return to pan, adding the chopped mint and remaining stock
- Heat the soup through, remove from heat and add creme fraiche or soya cream, top with mint leaves, enjoy!
