Organic carrot & coriander

Serves: 4
- 1 onion, chopped
- 1 tsp ground coriander
- 1 medium potato, chopped
- 1 Bouquet garni
- 600g carrots, peeled and chopped
- 1L chicken stock (or to your preferred consistency)
- handful of fresh coriander
- Fry the onion in a little oil for 5 minutes, until softened
- Stir in the chopped potato and ground coriander, mix together
- Add the carrots, bouquet garni and stock.
- Bring to the boil, reduce the heat and cook for 25 minutes or until tender
- Tip into food processor and blitz until smooth
- Finely chop the coriander and sprinkle to serve
