Slow cooker chicken jalfrezi

This curry is a little on the spicy side for my little one, but mild enough for me and my husband to enjoy.

Slow cooking meat is a great way to use less expensive cuts and make them taste fantastic. Slow cooking also takes minimum preparation and you come home to a home-made meal that is perfectly cooked and ready when you want to eat it.

I will be posting more slow cooked recipes over the chilly months, enjoy!

Ingredients
  • 600g diced chicken (mix of breast and thigh)
  • 1 large onion, roughly chopped
  • 2 cloves garlic, roughly chopped
  • 2 fresh green chillies, chopped
  • 1 red pepper, roughly chopped
  • 2 tablespoons of sundried tomatoes chopped
  • 1 and a half tins of chopped tomatoes (600g)
  • 2 medium carrots chopped into thin circles (not traditional but up's the veg content of this meal and adds dimension to the dish)
  • Spices
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • ½ teaspoon chilli powder
  • 1 teaspoons garam masala
  • 2 teaspoons curry powder
Instructions
  1. Fry chicken in batches until light brown
  2. Add onion and spices to slow cooker and mix thoroughly
  3. Add chicken and mix thoroughly
  4. Add pepper and carrots, chopped tomatoes, sundried tomatoes and mix again
  5. Put on a low heat for 6 hours, check chicken is cooked throughout and piping hot before serving.
  6. Enjoy with rice
