This curry is a little on the spicy side for my little one, but mild enough for me and my husband to enjoy.
Slow cooking meat is a great way to use less expensive cuts and make them taste fantastic. Slow cooking also takes minimum preparation and you come home to a home-made meal that is perfectly cooked and ready when you want to eat it.
I will be posting more slow cooked recipes over the chilly months, enjoy!
Slow cooker chicken jalfrezi

Ingredients
- 600g diced chicken (mix of breast and thigh)
- 1 large onion, roughly chopped
- 2 cloves garlic, roughly chopped
- 2 fresh green chillies, chopped
- 1 red pepper, roughly chopped
- 2 tablespoons of sundried tomatoes chopped
- 1 and a half tins of chopped tomatoes (600g)
- 2 medium carrots chopped into thin circles (not traditional but up's the veg content of this meal and adds dimension to the dish)
- Spices
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- ½ teaspoon chilli powder
- 1 teaspoons garam masala
- 2 teaspoons curry powder
Instructions
- Fry chicken in batches until light brown
- Add onion and spices to slow cooker and mix thoroughly
- Add chicken and mix thoroughly
- Add pepper and carrots, chopped tomatoes, sundried tomatoes and mix again
- Put on a low heat for 6 hours, check chicken is cooked throughout and piping hot before serving.
- Enjoy with rice
