Delicious pea & mint soup

I just know you are just going to love my retro crockery collection over the coming months. We live near the vibrant market town Hungerford which is renowned for its antique shops and I have been raiding the cellars! This delightful soup bowl is just one of them!

Beautiful pea green soup

This beautiful pea-green soup is packed full of goodness, such as iron-rich spinach (which is best eaten cooked for maximum absorption of this important nutrient), chlorophyll-full peas and fresh sweet mint!

That isn’t the best bit about this recipe though: the most important thing is that it is super delicious, contains just a few simple ingredients and is super, duper easy to make!

Ingredients
  • 25g butter or oil
  • 1 large onion, chopped
  • 450g, washed & roughly chopped spinach
  • 225g frozen peas, defrosted
  • 850ml vegetable stock
  • 3 tbsp chopped mint
  • 150ml creme fraiche or soya cream
  • Mint leaves to decorate
Instructions
  1. Heat the butter or oil in a large saucepan and add the chopped onion over a medium heat, cook for 5 mins
  2. Add the chopped spinach, stir until wilted then add peas and stir again
  3. Add half of the stock and bring to the boil, then simmer for 5 mins
  4. Puree the soup in the blender, return to pan, adding the chopped mint and remaining stock
  5. Heat the soup through, remove from heat and add creme fraiche or soya cream, top with mint leaves, enjoy!
