Super healthy coleslaw

My daughter’s godparent’s are Polish and one thing I learnt when we first went to Poland is that a meal is not complete without a beautiful side salad and how much more delicious and interesting they are than a garnish of soggy tomatoes and an iceberg lettuce leaf!

This coleslaw is so vibrant, filling and tingling with fresh flavours and crunch. It makes a delicious and sophisticated accompaniment to a lunch or light dinner.

It is also super inexpensive and simple to make, the process is much quicker with the aid of a food processor!

Ingredients
  • Half a red cabbage, outer leaves and stalk removed
  • 2 green apples, cored and peeled
  • 2 large carrots, peeled
  • ½ small red onion peeled
  • 2 tablespoons dijon mustard
  • 1 garlic clove, crushed
  • 1 teaspoon of honey
  • 5 tablespoons of olive oil
  • 3 tablespoons of white wine vinegar
  • Freshly chopped nuts and dried cranberries or blueberries to garnish
  • Handful of freshly chopped coriander
Instructions
  1. In your food processor, shred the cabbage and grate the carrots, apples and onion. Transfer to a bowl
  2. Mix the mustard, garlic, honey, olive oil and white wine vinegar together in a jug and mix to combine.
  3. Pour over the salad and incorporate the mix by hand.
  4. Sprinkle your fresh coriander and nuts/fruit garnish on top
